Schmid’s fresh gourmet Schlemmer Spätzle are produced using the best durum wheat semolina and 8 eggs per kilogram of semolina. The dough is processed gently according to artisanal methods and given the rest it needs before cooking.

This makes the Spaetzle particularly tasty, allows them to absorb sauce wonderfully and gives them a full, home-made flavour. Like the traditional home-made Spaetzle, ‘Schlemmer’ Spaetzle have irregular shapes, combining thicker, thinner, longer and shorter spaetzle.

Spätzle are a type of soft egg noodle or dumpling that originated in the regions of Germany, Austria, and Switzerland. The word ‘Spätzle’ translates to “little sparrows” in English, which some believe refers to the shape of the noodles resembling small birds.
